Mattison's Forty-One and Fess Parker Winery Team Up for Multi-Course Wine Dinner

The Sarasota restaurant and California winery will provide a paired dining experience as part of this year's Forks & Corks festivities.

The 15th annual Forks & Corks Food and Wine Festival is in full swing—and Mattison’s is joining the party. Tomorrow, May 12, at 6:30 p.m., Mattison’s Forty-One will pair its fine dining cuisine with Fess Parker Winery's wines. 

Founded by Fess Parker, the legendary actor known for his portrayals of Davy Crockett and Daniel Boon in the 1950’s and 60’s, Fess Parker Winery is a multi-generational vineyard and winery located in Los Olivos, California. Fess Parker is known for its Rhône and Burgundian varietals and crafts an array of wines ranging from mourvèdre to grenache rosé. 

During the event, Chef Paul Mattison will be serving a multi-course dinner featuring its own Fess Parker wine pairing. The night will begin with a peach brie tartlet, paired with grenache blanc, followed by prawn and grits, topped with toasted almonds and herb-infused butter, with Inspiration White.

The second course will be grapefruit crusted salmon with Granny Smith apple slaw, complimented by a Sandford & Benedict chardonnay. Pork belly crusted in fennel pollen will be served with Rodney’s syrah. Revelation Red is the pairing for a plate of bison, sweet potato flan and peppered Brussel sprouts, and the night will end on a sweet note, with a creamy Italian pear and cashew torte accompanied by a glass of Blanc Di Noir—Festivity. 

Fess Parker’s national sales director and advanced sommelier, Elizabeth Cooper, will serve as guest speaker for the evening. Reservations are required.
