JPan Is Showcasing Different Cuts From a 170-Pound Tuna at a Special Dinner, and You're Invited

Guests are invited to watch as the restaurant's chefs break down the fish before enjoying an eight-course tasting menu.

JPan Sushi & Grill at University Town Center is hosting a bluefin tuna cutting and chef tasting on Mar. 22 and 23. For $100 per person, guests are invited to watch as the restaurant's chefs break down a 170-pound tuna before enjoying a meal composed of different cuts of the fish.

The fish, which will be flown in from Spain, "is 100 percent aquaculture-raised,” says JPan co-owner Daniel Dokko. This means that it's raised in a large pen in deep ocean waters before being harvested for consumption.

“We’re going to present different cuts of the tuna," Dokko says. "If you think of it like a cow that has filet mignon, New York strip and ribeye, the tuna also has different parts. Akami is lean, chūtoro is medium fatty, and otoro is the fattiest and most desirable cut."

The dinner won’t be restricted to just tuna, he adds. To alleviate palate fatigue, the eight-course tasting menu will also include sea bass, sea urchin and Wagyu beef.

Interested attendees are invited to register through the restaurant’s website. The cutting and dinner officially begin at 6 p.m. but Dokko recommends arriving early, at 5 p.m., for a drink and a chance to mingle with other guests, who will be seated nearby at the community-style tables.

“It is going to be so much fun," he says. "It’s hard to get to sample all these great products in one sitting. You’re going to have so much excellent food and have a really good experience."
