Bill Nelms Wants You to Know That Mushrooms Aren’t Just for Eating Anymore

Bill Nelms, the owner of Mr. Fun Guy USA, comes by his mushroom passion honestly. The 68-year-old’s family owned a mushroom business in Kennett Square, Pennsylvania, known as the mushroom capital of the world because it generates 60 percent of the country’s mushrooms.

Nelms moved to Florida to work as a chef in Fort Myers, and opened his business in 2014. “I started a booth at one market and now am at 14 markets across Southwest Florida,” he says. “We sell about 400 pounds of mushrooms a week.”

At Mr. Fun Guy USA, Nelms grows numerous types of mushrooms, including oyster, lion’s mane, maitake, shiitake, cremini, portabella, king oyster and white button varieties. He and his business partner Gil Perez are now focused on turning part of their harvest into mushroomy products like tinctures and teas. He says he’s enjoyed learning about how to use mushrooms beyond just eating them. “I didn’t know the medicinal values,” he says. “It’s so nice to be helping and teaching people.”

Mushrooms for cooking are still very much on the table, however. Nelms develops recipes for products like mushroom burgers, lion’s mane “crab” cakes and a salad dressing line. All the while, he keeps his company’s motto top of mind: “Making healthy delicious.”
