Chef Darwin Santa Maria has a new restaurant in the works. He hopes to open CeviChela Latin Street Food on Siesta Key later this month, just in time for Memorial Day weekend.

Santa Maria says the restaurant will fuse seafood-centric Latin American cuisine with craft beer, offering lunch and dinner and late-night service on the weekends. The menu will include quick-service, made-to-order ceviches, tacos and more in a shack-like space that seats about 50 inside and out. The restaurant will also offer catering and a scooter delivery service on the key, as well as craft beers from Florida breweries and drafts dreamed up by Tom Harris, the former head brewer at JDub's Brewing Company. Santa Maria and Harris have collaborated recently on a series of popup dinners at Sarasota's Cafe in the Park.

CeviChela is Santa Maria's first restaurant since he shuttered Darwin's on 4th last July. He announced his departure from Darwin Brewing Co., the Bradenton brewery that grew out of the restaurant, last fall. CeviChela will be located at 5110 Ocean Blvd., the former home of Señor Siesta. "The people who were coming here are not going to be disappointed," Santa Maria promises.
