The Anna Maria Fish Company's Cortez bottarga recently won a 2017 Good Food Award in the Preserved Fish category. The awards are handed out by the Good Food Foundation, a San Francisco nonprofit, and they recognize high-quality food products that also support "sustainability and social good," according to a press release. The Anna Maria Fish Company was the first company in the U.S. to produce bottarga, the sun-cured roe of grey striped mullet. The company was established in 2007 by restaurateur Ed Chiles and Cortez native Seth Cripe and currently produces more than 1,500 pounds of bottarga each year.
