Chef Louis Robinson Will Host "Grind & Dine" Coffee-Pairing Dinner at Baker & Wife
Here's a fun dining event that's happening later this month: "Grind & Dine" at Baker & Wife on June 27, a five-course coffee-pairing dinner from Chef Louis Robinson featuring Justin Banister of Out and About Coffee. The menu will feature food cooked and paired with gourmet, single-origin coffee, as well as artisan coffee drinks.
Robinson, who's become known for his local pop-up dinners, tell us that the ingredients on the menu "have been thoughtfully selected to give our guests something truly unique they may not have tried before. Many ingredients are being flown in overnight from other parts of the country to bring a new and exciting taste to the dinner--things like halibut cheeks, morel mushrooms, summer truffles, bison short ribs, and heirloom baby vegetables."
"Being able to highlight coffee, not only with paired drinks, but also worked into the menu itself, is very exciting as a chef," Robinson continues. "I really hope my excitement shows up on the plate and makes my guests happy."
Course 1
Fried halibut cheeks with sweet and sour datil pepper dipping sauce, mint and cilantro. Paired with freshly made coffee "Mojito"
Course 2
Morel mushrooms and pearl onions cooked with Kenyan coffee, fresh herbs and brown butter yellow zucchini purée with summer truffle
Course 3
Pickled green bananas, calabaza squash purée, pink grapefruit, charred shishito peppers, rendered chorizo
Course 4
Bison short ribs simmered in Guatemalan coffee and dried chilies, corn cake, avocado mousse, papaya lime crema, pickled shallots
Course 5
Carolina river rice pudding, fresh Grenadian nutmeg, 5oasted macadamia nuts, Florida blueberries and candied lime peel, paired with South American cafe con leche
