James Plocharsky, owner of Jim’s Small Batch Bakery, creates his pastries, tarts, cakes and puffs by the season. Spring put him in mind of lavender. So he’s made a lavender-infused classic French creme brûlée with a silky custard base and a crisp, sweet caramelized cap. He tops it with fresh blueberries and a scoop of housemade blueberry sorbet and sells it for a modest $5. It’s fresh, light and delicately floral—a genuine taste of spring.  Plocharsky has been cooking in restaurants in Sarasota since 1986; his bakery and sandwich shop (best BLT in town) is the fulfillment of his culinary ambitions, and he may be expanding to include small-menu dinners soon. Jim’s Small Batch Bakery, 2332 Gulf Gate Drive, Sarasota. Hours usually 8 a.m.-4 p.m.  (941) 922-2253.
