Chef Judi Gallagher's Foodie's Notebook

Great dining finds from Chef Judi Gallagher.

The Standing Rule

What dining rules do you follow?

by Judi Gallagher

I confess to being a home cook with a whole lotta rules. I refuse to have cans or bottles on the dinner table. I want condiments either used in the kitchen beforehand or served in a ramekin, and for goodness’ sakes—the television on even in the next room while we are eating any meal of the day is beyond demerit worthy. I will not permit take-out containers of any kind on the table, including a pizza box. I do, however, allow “pick as you cook” (aka standing and noshing in the kitchen).

Caught in the act!

In the restaurant business, you walk around with spoons and taste all day long. You grab a piece of “this” to make sure it is properly seasoned and you taste a bit of “that” to ensure a consistent product. In fact, I think my husband’s constant picking of the salad was part of our compatibility. So, when our friend Jeff Kaine asked me if I believed in the “standing rule” in the kitchen, of course I said yes. I thought it to be an innocent question. And Jeff was asking me lots of questions like, “Where have you been eating lately? And “Where should we all go to dinner?” You know those simple little questions that certainly do not make you feel you are about to get into a culinary marital dispute.

Now, little did I know that Jeff’s wife, our dear friend Bambi Famous-Kaine, had a “No eating while standing rule” in her own kitchen. So of course, Jeff immediately threw me under the kitchen rule bus, so to speak. Apparently, Bambi’s disapproval of standing while munching is non-negotiable, and I fear being in a tasting dilemma. I think we all agree that eating in front of an open refrigerator is beyond just breaking the rules, but picking a few pieces of salad or stealing a slice of steak before it goes on the serving platter is just part of the immense pleasure of cooking.

So now Jeff seems to be quoting me as he stands and consumes and Bambi seems to be at a loss for my, how shall we say, betrayal of eating etiquette.

Well.....it's all a matter of intimacy, isn't it?....Isn't everything?

I mean, whether one can sneak a finger-taste of food is directly related to how close one is to the chef...kind of like a peck on the culinary cheek or a pat on the beh...back.

Look at it as a mouth-watering love tap! And, by all means, be careful of overdoing it with political correctness, culinary or otherwise.....Paul

Being from a very ethnic mixture we had many rules from many cultures. How we sat in our chair was (is) important. Feet on the floor, a straight back, napkin in lap. Only use one hand to eat. The other in your lap! EOT meant - Elbows Off Table - even to guests! :)

So many rules, so little time. I agree in that the dinner table can be a sacred place to enjoy a home cooked meal and conversation with your spouse and children (GASP!) however, I have to admit I am a selfish chef and unable to contain my excitement over something that I've cooked well, and of course being Italian, I absolutely must dip that crusty bread in sauce and stick it in the mouth of anyone who may be within reach. Where have all the fun chefs gone?

Agreed with the cocktails and snacks and I am waiting for the invitation too. I am curious to hear from Jeff if Bambi accepts the cocktail and appetizer nibbles at the counter- Bambi, do tell and Jeff, do confess!

I have to admit we do have a few bad habits in the kitchen, such as standing at the fridge or cupboard and snacking on something which we probably shouldn't be snacking on in the first place. We also tend to leave the TV on too much while sitting at the dinner table.
But I have to agree that you have to taste some of the food--while standing--when it is being prepared, to make sure it is good enough to serve. My favorite is that first piece of London broil or roast beef!!
Now if it is just us (me, my husband, my son and his girlfriend), we might not use all the right serving pieces on a regular basis. But if I do cook a big meal for just us, or if we have friends over, I do like to use all the right serving pieces--down to that ramekin for that condiment and the proper glass for a beverage.
So Bambi, if I ever get lucky and you stop and visit me in Delaware, I hope you aren't offended by standing around our kitchen island enjoying some appetizers and before-dinner drinks. But know that when dinner is served the TV will not be on, the table will be beautiful (everything will have the right dish), and there will be lots of laughter and wonderful conversation. (Love you much.)

There is only one exception when I will allow the Standing Rule ...when Judi Gallagher bakes for Jeff and I and we both proceed to devour a dozen(well 1 less since Paul snitched one) raspberry bars in the course of 24 hours! yes 24 hours! we did not have a chance to sit with these palate pleasers! Thanks Judi! so much for the diet! yummie
