Mangospacho
3/4 cup mango chunks
2 bell peppers, chopped
2 cucumbers, chopped
1/3 cup sugar
1/3 cup chopped cilantro
1 quart V-8 juice
1/4 cup red wine vinegar
1 teaspoon hot sauce
1 tablespoon extra virgin olive oil
1 quart chopped plum tomatoes
Whirl everything in a blender to a coarse consistency. Refrigerate until serving time. Garnish each bowl with a dollop of sour cream and a sprig of cilantro.
